I see the "force pae" entry. Will uber only use PAE if I select that, or does it automatically try to use PAE when applicable? Is there any way to check and see if I am using PAE?

It will use it normally because the kernel supports it, but if you experience troubles choose it as a boot option. See here for more.
To find out if it's working run:
egrep "HIGHMEM|X86_PAE" /boot/config-`uname -r`
If the following lines display, then it's working:
