I installed UberStudent a little more than two weeks ago. I just noticed that there is a newer version out? What are the inherent differences? If there are differences, have the updates been pushed out?

The main difference is that you installed both the mate DE and the XFCE DE by installing the first .iso. The new releases are respins with ONE DE on each .iso.
There was also a dependencie issue in the wine/playonlinux install process, which is now fixed in the version uberstudent-2.0.4:1. /viewtopic.php?f=5&t=43
I don't know if a simple update of your version solves the issue :?:

I also have a kernel question. Running apt-get and aptitude provide me with different results. Both do not want to update xorg; however, aptitude claims that it cannot resolve dependencies and apt-get wants to update my kernel to one ending in .19. Will kernel upgrades do anything to US as a distro?

The update to kernel 3.xyz.19 is considered as point update and just brings bug fixes or security fixes. Someone correct me plz if I'm wrong
As for your xorg update I can't help you, sorry.

The very, very quick minor number release (2.0.4.1) is because an xorg bug was released via a PPA in the repository as I described at viewtopic.php?f=5&t=43#p79 . :| :( The minor number release fixes the issue. And as David stated, I released MATE-only and XFCE-only editions with that number.

The attached script (from the post above) fixes the issue and will also stop the apt and aptitude discrepancies you mentioned. Just run it with sudo and then run "sudo apt-get update" in a terminal and you're done.

I'm working very hard to have uberstudent.net going so UberStudent will not have so much as even one external PPA in it for the next major release! If you have skills at setting up a repo, your help would be very welcomed! ;)
